Method
 

  1. Blend Almonds – In a blender, combine almonds and 1 cup of water. Blend until smooth and milky.
  2. Make Syrup – In a saucepan, heat sugar with 2 cups of water until dissolved. Remove from heat and let cool slightly.
  3. Combine Mixture – Stir the almond mixture into the sugar water. Add almond extract, salt, and lemon zest if desired.
  4. Strain (Optional) – For a smoother texture, strain the mixture through a fine mesh strainer.
  5. Freeze – Pour into a shallow dish and place in the freezer.
  6. Scrape – Every 30–40 minutes, scrape the mixture with a fork to form icy flakes. Repeat for about 4 hours until fully frozen and fluffy.
  7. Serve – Scoop into bowls or glasses and garnish with lemon zest or chopped almonds.
