  • 1 Basting brush
  • 1 Fish spatula or tongs

  • 2 cloves garlic minced
  • 1 tbsp lemon juice
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika

Method
 

  1. Preheat the grill to medium-high heat and oil the grates to prevent sticking.
  2. In a mixing bowl, whisk together olive oil, garlic, lemon juice, salt, pepper, and paprika.
  3. Brush the amberjack fillets generously with the marinade on both sides.
  4. Place the fillets on the grill and cook for 5–6 minutes per side, depending on thickness, until the fish flakes easily with a fork.
  5. Remove from the grill and let rest for 5 minutes.
