- Preheat oven to 350°F (175°C). Line a 9x9-inch baking pan with parchment paper.
- In a mixing bowl, cream together softened butter and granulated sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
- In another bowl, whisk together flour, baking powder, and salt.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- Stir in chopped nuts if using.
- Spread the batter evenly into the prepared pan. Sprinkle shredded coconut on top if desired.
- Bake for 20–25 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 15 minutes before transferring to a wire rack.
- Once cooled, dust with powdered sugar, cut into squares, and serve.
