- Prepare the Mixture: In a large mixing bowl, combine ground turkey, garlic, ginger, scallions, soy sauce, sesame oil, panko, egg, and pepper. Gently mix until just combined—do not overmix.
- Shape the Patties: Divide the mixture into 4 equal portions and form into burger patties. Place on a plate and refrigerate for 15 minutes to firm up.
- Cook the Burgers: Heat a skillet or grill pan over medium heat. Lightly oil the surface and cook patties for 5–6 minutes per side, or until the internal temperature reaches 165°F (74°C).
- Assemble the Burgers: Toast buns if desired. Spread sriracha mayo on each bun, place the turkey patty, and top with cucumber, carrots, and cilantro.
- Serve & Enjoy: Serve immediately with your favorite side dishes.
