- Sear the beef: Heat olive oil in a Dutch oven over medium-high heat. Season the beef with salt and pepper, then sear until browned on all sides. Remove and set aside.
- Sautรฉ the aromatics: In the same pot, reduce heat and add onions and garlic. Cook until softened, about 3โ4 minutes.
- Add tomato paste & wine: Stir in tomato paste and cook for 1 minute. Pour in red wine (if using) and scrape the bottom to deglaze.
- Simmer: Return beef to the pot. Add beef broth, Worcestershire sauce, thyme, and bay leaves. Bring to a simmer.
- Add vegetables: Add carrots and potatoes. Cover and simmer on low heat for 1.5 to 2 hours, or until the beef is fork-tender.
- Finish: Remove bay leaves. Let rest for 10 minutes before serving. Garnish with chopped parsley if desired.
