- Chill coffee: Brew a strong coffee and chill fully (or use cold brew). Pour into a measuring cup.
- Add to blender: In a blender add chilled coffee, vanilla ice cream, milk, sugar/simple syrup (if using), and vanilla extract. Add ½–1 cup ice if you prefer an extra thick/frosted texture.
- Blend: Pulse on medium-high until smooth and frosty, about 20–30 seconds. If too thin, add more ice or a bit more ice cream; if too thick, add a splash more milk or coffee.
- Taste & adjust: Taste and add a touch more sugar or vanilla if needed. Blend briefly to combine.
- Serve: Pour into 4 tall glasses. Top with whipped cream if desired. Serve immediately with a straw or spoon.
