Method
 

  1. Mill the flour using a grain mill, measuring 3 cups after milling. Let it cool slightly if warm from the mill.
  2. Mix the dough: In a stand mixer or large bowl, combine the warm water, milk, honey, and yeast. Let it bloom for 5–10 minutes until foamy.
  3. Add the fresh milled flour, salt, and olive oil to the yeast mixture. Mix until a sticky dough forms.
  4. Knead for 8–10 minutes with a stand mixer or by hand until smooth and elastic. Add a tablespoon of flour only if too sticky.
  5. Cover the dough and let it rise for 1–1.5 hours or until doubled in size.
  6. Punch down and shape the dough into a loaf. Place into a greased 9x5-inch loaf pan.
  7. Cover and let it rest for 30–45 minutes until the dough rises slightly above the pan’s edge.
  8. Preheat oven to 375°F (190°C). Bake the loaf for 30–35 minutes, or until golden brown and internal temp reaches 190°F (88°C).
  9. Let it cool in the pan for 10 minutes, then transfer to a wire rack. Slice only when completely cool.
