Method
- Mill the flour using a grain mill, measuring 3 cups after milling. Let it cool slightly if warm from the mill.
- Mix the dough: In a stand mixer or large bowl, combine the warm water, milk, honey, and yeast. Let it bloom for 5–10 minutes until foamy.
- Add the fresh milled flour, salt, and olive oil to the yeast mixture. Mix until a sticky dough forms.
- Knead for 8–10 minutes with a stand mixer or by hand until smooth and elastic. Add a tablespoon of flour only if too sticky.
- Cover the dough and let it rise for 1–1.5 hours or until doubled in size.
- Punch down and shape the dough into a loaf. Place into a greased 9x5-inch loaf pan.
- Cover and let it rest for 30–45 minutes until the dough rises slightly above the pan’s edge.
- Preheat oven to 375°F (190°C). Bake the loaf for 30–35 minutes, or until golden brown and internal temp reaches 190°F (88°C).
- Let it cool in the pan for 10 minutes, then transfer to a wire rack. Slice only when completely cool.

Notes
You can use a mix of white and red wheat berries for a balanced flavor.
For softer texture, substitute part of the water with additional milk.
