- Preheat oven to 400°F (200°C). Lightly grease a baking dish.
- In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, paprika, salt, and pepper.
- Add chicken breasts to the marinade, coating well on both sides. Let sit for 10–15 minutes (or up to 1 hour in the fridge).
- Place chicken in the baking dish and pour remaining marinade over the top.
- Bake for 22–25 minutes or until internal temperature reaches 165°F (74°C).
- Remove from oven, let rest for 5 minutes, then garnish with fresh parsley and serve.
