Method
 

  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish.
  2. In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, paprika, salt, and pepper.
  3. Add chicken breasts to the marinade, coating well on both sides. Let sit for 10–15 minutes (or up to 1 hour in the fridge).
  4. Place chicken in the baking dish and pour remaining marinade over the top.
  5. Bake for 22–25 minutes or until internal temperature reaches 165°F (74°C).
  6. Remove from oven, let rest for 5 minutes, then garnish with fresh parsley and serve.
