Method
 

  1. Add mint leaves and lime juice to each glass. Gently muddle to release the mint oils—do not over-mash.
  2. Add lavender simple syrup and white rum to each glass. Stir to combine.
  3. Fill the glasses with ice and top with club soda.
  4. Stir gently and garnish with a lime wedge and a sprig of lavender or mint.

Notes
