  • 3 cups shredded green cabbage
  • 1 cup shredded purple cabbage
  • 1 cup shredded carrots
  • 1/4 cup low-sodium Greek yogurt
  • 2 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon honey optional
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Freshly ground black pepper to taste
  • 1 tablespoon chopped fresh parsley optional

Method
 

  1. In a large bowl, combine the shredded green cabbage, purple cabbage, and carrots.

  3. Pour the dressing over the shredded vegetables and toss until evenly coated.
