Method
 

  1. Prepare Ingredients: Rinse and hull the strawberries. Crush them using a potato masher to get 4 cups of crushed berries.
  2. Mix with Lemon Juice: In a large bowl, combine crushed strawberries with lemon juice.
  3. Add Pectin: Gradually stir in the MCP pectin. Let stand for 30 minutes, stirring occasionally.
  4. Add Sugar & Cook: Stir in all the sugar at once. Transfer the mixture to a saucepan and bring to a full rolling boil over high heat, stirring constantly.
  5. Boil and Stir: Boil hard for 1 minute while stirring constantly.
  6. Jar the Jam: Remove from heat. Skim off foam if necessary. Quickly ladle into sterilized jars, leaving 1/4-inch headspace.
  7. Seal and Cool: Wipe jar rims and adjust lids. Let cool at room temperature. Refrigerate or process for long-term storage.
