- Preheat the Oven – Set your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Mix Dry Ingredients – In a large bowl, whisk together flour, sugar, baking powder, and salt.
- Cut in Butter – Using a pastry cutter or grater, work the cold butter into the flour mixture until it resembles coarse crumbs.
- Add Pistachios – Stir in the chopped pistachios.
- Mix Wet Ingredients – In a small bowl, whisk together milk, egg, and vanilla extract.
- Combine – Pour wet mixture into dry ingredients and stir gently until a soft dough forms. Do not overmix.
- Shape Dough – Turn dough onto a lightly floured surface, gently pat into an 8-inch circle, and cut into 8 wedges.
- Prepare for Baking – Place wedges on the baking sheet, brush tops with milk, and sprinkle with coarse sugar if desired.
- Bake – Bake for 18–20 minutes, or until scones are golden brown.
- Serve – Allow to cool slightly before serving warm.
